Healthy Holiday Recipe: Grilled Chicken Caprese Salad

The holidays are a festive time of year, often full of delicious meals and treats. However, if you care for a senior loved one or are hosting this year’s family celebrations, it’s important to keep your aging family members’ dietary needs in mind when preparing lunch or dinner.  Many seniors need to watch their diet and eat foods that are high in protein, low in fat, and low in cholesterol. What You’ll Need:

1-2 red bell peppers chopped into pieces
1 ½ cup mozzarella cheese (fresh slices)
1 pound of all natural, no antibiotics, chicken breasts cut in small pieces
12 oz. romaine lettuce
1 ½ cups balsamic vinaigrette salad dressing
A dash of salt and pepper
1 teaspoon of olive oil
1 tablespoon of parmesan cheese


Put 1 teaspoon of olive oil in a pan along with about a tablespoon of balsamic vinaigrette. Place the bell pepper and uncooked chicken in the pan and grill with the balsamic vinaigrette until the red pepper is softened and the chicken is cooked evenly. Make sure to salt and pepper your chicken as soon as you put it in the pan to cook. This should take about 5-7 minutes.

While the chicken is being cooked, have your romaine lettuce cleaned, chopped up, and place it into a large bowl. Slice up your mozzarella cheese into small size pieces and set aside. Once you have everything chopped up and the chicken and peppers are cooked, pour all of the chicken and peppers on top of your romaine lettuce. Then add your mozzarella and parmesan cheeses. Mix all ingredients and serve.
